The dream of producing our own wine started back in January 2000; by January 2010 we were able to put 10 years of hard work into a bottle… We are a boutique producer, making high quality wines in limited amounts. We wish to conserve the indigenous grape varietals of Anatolia and Thrace which are suitable to winemaking, and introduce them to rest of the world and to turn international varietals being grown at various micro climates of Turkey into quality wine…

Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot varieties are grown in our 4 hectares single vineyard in Kaynaklar – Izmir at 235 meters above sea level. Every effort is made to reduce the yields and to maximize the fruit intensity and quality. The wine is barrel aged for 24 months in French oak (1/3 new oak and 2/3 1 year old oak), plus bottle aged for 12 months before release.
Deep dark cherry red. Rich aroma of sweet and ripe cassis. Firm, dense, chewy tannins filled out with pure fruit. Full of aging potential. The fruit shines through the oak influence. A big and bold wine with a long finish.

Paşaeli Kaynaklar 2010 is a blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot varieties grown in our Serez vineyard in Kaynaklar - İzmir. It has been aged 24 months in 50% new and 50% 1 year old French oak barrels of 225 liters. It has a deep dark cherry red color. The nose has rich aroma of sweet, ripe cassis and blackberry. On the palate it is firm, dense with chewy sweet tannins filled out with pure fruit. The fruit shines through the oak influence. A big, full-bodied, balanced wine with a long finish.

Papazkarası variety is native to Thrace. Grown in a single vineyard, it is fermented with native yeast only. It is barrel aged for 7 months in French oak. The wine has a lightish red cherry colour. The palate has aromas of peppery red cherry with a fine acid and tannin balance and a long finish.

Karasakız variety is native to north Kaz Dağları. Grown in a single vineyard at an altitude of 550 meters, it is fermented with native yeast only. And it is barrel aged for 6 months in French and American oak barrels. Paşaeli 6N Karasakız, Merlot 2014 has a lightish cherry red color. The nose is delightful with aromas of cranberry and sweet red cherry. The distinct nose carries over onto the palate – sweet cherry red fruit, sour cherry freshness with a touch of spices and a long fresh finish.

Çalkarası

Çalkarası is grown exclusivelly in Çal District of Denizli. As a variety it is very suitable for producing high quality rose wines due to its strong flavours present in the fruit also balanced with good acidity. Our Çalkarası is coming from a single vineyard at an altitude of 850 meters. So days are warm but nights are cool which help to preserve acidity. Kept with the skins for 18 hous to extract colour and flavours it has a dark rose colour. It was fermented at 18C for 15 days. It was kept “sur lie” for 3 months with 2 “batonnage” a week to increase complexity of the wine. It is a 100% Çalkarası. On the nose it has red fruits as well as the palate, especially strawberry and rasberry balanced with good acidity and a long finish.

Kolorko

Kolorko is an indigenous variety that is native to Şarköy area in Thrace. Once a very famous variety, it is now close to extinction. Currently Paşaeli is the only winery in the World to produce wines made from Kolorko variety. Our wish is to conserve Kolorko for the future generations. Therefore we have been grafting Kolorko vines in our Hoşköy vineyard in Thrace. Every year production is increasing. Our hard work is noted in Wine Grapes book co-authored by Jancis Robinson MW, Julia Harding MW and Jose Vouillamoz, World's leading vitis-vinifera DNA expert.

Here is what Alder Yarrow of www.vinograpy.com wrote for 2009 vintage; “Light yellow-gold in the glass, this wine smells of toasted nuts, lemon oil, and wet stones. In the mouth the wine offers a lightly bitter lemon pith flavor with a hint of pink grapefruit to it. Bitter herbal and mineral flavors linger with pomelo zest in the finish. Slight sulfurous in quality. 12% alcohol. 100% Kolorko, which is an obscure indigenous grape variety from the region. Score: between 8.5 and 9.”

Yapıncak variety is grown exclusively in the European side of Turkey called Thrace, around the coastal villages of Şarköy, Mürefte and Hoşköy. Our fruit comes from a single vineyard in Şarköy that is about 150 meters above sea level and is facing south towards Sea of Marmara. There is always a cooling breeze coming from the sea. The vineyard has a gentle incline which is great for drainage. The vines are about 35 years old and are free standing vines. We get low yields but quality fruit. The grapes were pressed with whole clusters. The juice was fermented in stainless steel tanks at 18C for 21 days. About 10% was barrel fermented in French oak barrels. Then we kept the wine (both tank and barrels) with its lees for 3 months with lees stirring twice a week. This gives the wine some complexity and also fatness. Then we barrel aged the barrel fermented 10% in the same oak barrels for 3 months. Then all were blended. This small amount of oak influence helps in giving more complexity to the wine . Very pale gold. Highly distinctive aroma, both rich and tangy. Intense lemon, hint of clementine plus a more oily minerality and quince. Lovely citrus on the palate too – bright and crisp and full in the mouth with decent acidity and minerality.
